Mango and Prawn Curry

This recipe is SPECTACULAR. It is delicious and also very original and exotic. If you have an event with friends or family, this dish is very successful and will be a conversation starter among your guests, I assure you.

I like to serve it over couscous, because it matches really well, but you can also serve it over rice or quinoa, for example, or even pasta!

If you want to add a spicy touch, you can add a little bit of chilli pepper in the olive oil at the beginning of the recipe, but this time I haven’t used it.

Ingredients:

  • 1 ripe mango, but not too soft
  • 200-300g of peeled prawns
  • Half an onion, chopped
  • 1 can of whole fat coconut milk (not coconut water)
  • Curry powder or curry paste
  • Olive oil
  • Salt and pepper
  • Chopped fresh chives

Preparation:

The first thing we will do is peel the mango and cut it into small squares. The idea is that we can later find the mango pieces while eating the dish.

In a frying pan, heat a couple of tablespoons of olive oil and add the onion until golden. We will also add the laminated chillies if we want it spicy.

Later we add the peeled prawns and sauté them until they are cooked and have changed color. Then we add the mango and mix it several times so that it integrates with the rest of ingredients.

We then add a little curry powder or curry paste. We mix well so that it spreads well and all the ingredients are soaked with spices. We also season with salt and pepper.

Finally we add the coconut milk, stir well and let it cook for a few minutes so that all the flavors mix well.

Remove from the heat and serve over freshly made couscous and sprinkle with a little chopped fresh chives to add a little color.
