Whole Wheat Banana Bread

If you have a sweet tooth but you still want to keep it healthy, this recipe is for you. This banana bread is tasty and full of fiber, plus it has all the goodness from the bananas. ¡A great healthy choice!

I make this recipe in a bread maker, but you can also bake it in the oven.

Ingredients:

  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 2 eggs, beaten
  • 4 ripe bananas, finely crushed
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 teaspoon salt
  • 1/2 tsp vanilla extract

Preparation:

First we mix together the butter and the sugar. Then add the eggs and crushed bananas (I just put them in and crush directly with a fork). Combine them well.

Sift together flour, soda and salt. Add to the creamed mixture and then add the vanilla.

Pour into a greased loaf pan and bake at 175ºC for about 60 minutes, or until a toothpick comes out clean.

Keeps well refrigerated for a couple of days. It also freezes nicely in loaves, wrapped individualy. To thaw just leave out at room temperature for about 30 minutes. I put these in the kids’ snackbox for school in the morning (still frozen), and by the time they eat them, they are perfect.
