Pan Fried Artichokes with Sesame Oil
These artichokes are absolutely delicious. I am obsessed with them! I eat them at least once a week. And it takes 5-10 minutes to make! They are so crunchy I could easily substitute them for potato chips!
Ingredients
- Sesame oil
- Fresh Artichokes
- Salt
Preparation
Take off the outer leaves of the artichoke and cut off the stem. Then also cut off the top of the leaves, keeping just the artichoke heart.
Cut the artichokes in half, and then slice them vertically so that you get thin pieces (this is the way to make them crunchy!)
Put a little drizzle of sesame oil on the pan and a little bit of salt. Once the oil is heated, put the pieces of artichoke in the pan one by one and allow to cook on a medium-low heat until golden. Drizzle a bit more of oil on top before turning the artichokes over, and cook on the other side until crunchy and golden on both sides.
Be careful with the heat, as if it is too high they might get crunchy on the outside, but stay raw on the inside. They need to cook well inside, as well as on the outside.
