Orange Vegetable Purée
Today I tried making a puree without broth and without salt, that is, using just the ingredients and water. The fewer additives we add to our food, the better for our health. But it is true that we risk them having less flavor.
Well, this purée turned out great! Very tasty and healthy. We really just need to find an ingredient to add to our recipe that will add that flavor naturally, such as a ham bone, chicken bone, a piece of bacon, etc … Then we can remove it before processing it, or leave the meat and process it too.
If we can add flavor without using the typical broths in containers or instant broths, we will be doing our health a favor, since these broths usually contain a lot of salt and sodium.
Ingredients:
- Pumpkin
- Carrots
- Sweet Potato
- Zucchini
- Onion
- A little bit of bacon
- Thyme and parsley (or you can use your favorite spices)
Preparation:
The first thing we will do is sauté the cut vegetables in a pot with a little bit of olive oil. We want them to cook a little, since this step adds a lot of flavor to the end result.
Then we add the bacon cut into small cubes (we can remove the fat part to lighten our purée) and the spices. We let the bacon cook a little, so that it releases flavor and a little bit of the fat.
We then cover it with water and cook for about 15-20 minutes. Depending on the texture we want, we can add more or less water. I like it rather thick, since children eat it better and it’s less messy, but you can do it however you like.
Finally we process it with a food processor and voila! We can serve it with some thyme leaves on top to decorate. It’s good to eat warm or cold.
