This salad can be served as an entree, as a main course or as a side dish. It is really complete with carbs, proteins and vegetables. It is also very filling and very tasty!
This dish keeps quite well for several hours outside of the fridge, and you can also prepare it in advance. Therefore it is very comfortable to take to a picnic or to prepare in advance for a party or event. As this salad is eaten cool, it’s more of a summer dish.

The first thing we will do is boil the potatoes in salted water until they are cooked. The time will depend on the size of the potatoes. To know if they are ready, we prick them with a fork and it should go through easily.
We cook them with the skin, remove from heat and let them cool down. I like to eat them with skin later, but if you want you can peel them once they have cooled.
On the side, we cut the rest of the vegetables and mix them with the olives and tuna fish in a large salad bowl. Dress with oil and vinegar, salt and pepper.
Finally we add the potatoes and mix again so that all the ingredients are distributed evenly.
