Konjac Spaghetti with Light Carbonara Sauce

Who said that eating light has to be boring? Today’s recipe is delicious, tasty and with a creamy texture that has little to envy to the original carbonara sauce. And with much fewer calories and no carbs! 😉

This recipe is made with konjac spaghetti, a discovery that I have recently made and that I am loving at the moment. They are made with the fiber of a plant called konjac, they are very satiating and low in calories and carbohydrates. It is a very good substitute for wheat pasta, since we can prepare it in a similar way.

Ingredients:

  • Konjac Spaghetti (1 pack of 200g)
  • 1/2 onion, diced
  • Bacon or ham cut in small pieces
  • 3 portions of creamy light cheese or 1 tablespoon of light cream cheese
  • 1/2 Cup of milk
  • 1/4 tsp konjac powder
  • Olive oil
  • Salt and pepper

Preparation:

Put the onion in a pan with a drop of olive oil and let it sauté until golden brown. Add the bacon or ham and cook also until golden brown.

Salsa carbonara light in preparation

Add the milk, the cheese portions and stir a little, undoing the cheese so that the sauce is formed. We add the konjac powders that will act as thickeners, and stir well. Then add salt and pepper to taste.

Once the sauce has thickened a little bit, add the konjac spaghetti and cook for a couple of minutes. Ready!
