Oriental Style Shirataki with Mushrooms

Shirataki are noodles made with konjac plant, they have close to no calories and zero carbohydrates. Perfect for a low fat or low carb diet! This recipe is very tasty and filling also, perfect for lunch or dinner.

Ingredients

  • Shirataki or konjac noodles
  • Portobello or mix of mushrooms, cut into small pieces
  • Spinach leaves
  • Chicken breast, cut into small pieces
  • Onion, diced
  • White and black sesame seeds
  • Sesame oil, 1 tbsp
  • Soy sauce, 2 or 3 tbsp
  • Agave, honey or other sweetener, 1 tsp
  • Mirin or sweet white wine, 1 tsp

Preparation

First of all, rinse the shirataki in cold water and drain. Put some sesame oil in a pan and allow to heat, then add the diced onion and mushrooms.

Once the onion is translucent add the cut chicken breast and cook until golden. Meanwhile mix the soy sauce, agave or sweetener and mirin in a bowl. Add the sauce to the pan with a little bit of water if necessary and mix well for 1 minute.

Finally add the spinach leaves, shirataki and cook for another 2 minutes. Serve and add the sesame seeds on top.
