
Lentil and Spinach Salad

I love lentil salads. The texture is dense and creamy at the same time. It is a great base for a salad, and goes well with a lot of ingredients. Here is a tasty version with raw vegetables and cheese.
Ingredients
- Cooked Lentils
- Fresh baby spinach leaves
- Ripe avocado, diced
- Fresh or goat cheese, diced
- Tomato, diced
- Red pepper, cut into small pieces
- Hard boiled egg, cut into small pieces
- Salt, vinegar and olive oil for dressing
Preparation
Cook the lentils in salted water. You can use canned lentils if you prefer.
Mix all the ingredients in a bowl. Dress with salt, vinegar and olive oil, and give it a toss.
