
Turkey, Vegetables and Chickpea Curry
This recipe is very tasty, sweet and comforting at the same time. The coconut milk gives it a delicious creaminess. In addition, turkey is a very lean meat and mixed with vegetables, it is still a very light dish. I hope you like it!
Ingredients:
- 500grs turkey, cut into thick pieces
- 1/2 zucchini, cut in small pieces
- 1/2 onion, chopped
- 2 large carrots, peeled and diced
- A handful of green beans, cut into pieces
- 1 sweet potato, cut into pieces
- 1 can of chickpeas, rinsed and drained
- 1/2 cup of water
- 300ml coconut milk
- Curry powder (best if it’s good quality)
- Olive oil
- Salt and pepper
Preparation:
The first thing we need to do is fry the turkey in a pot with a drizzle of olive oil. When it’s cooked and starting to brown, we set it aside on a plate.
In the same pot with another drizzle of olive oil we add the onion, the green beans, the carrot and sauté the vegetables adding the water until they soften a little bit, approximately 5-7 minutes.
We also add the sweet potato and zucchini, and cook for a few more minutes.
We put the turkey back into the pot and add the chickpeas, coconut milk, curry powder, salt and pepper. We give it a mix, cover and cook on medium heat for about 20 minutes, stirring occasionally. And it’s done!
We can serve it over white or brown rice, or just as it is for a low-carb diet. It’s delicious both ways!
