Braised Red Cabbage with Sausage and Apples
This recipe is very interesting. It is tasty and sweet. The cabbage and sausage pair perfectly, and the apples add the sweet twist. Delicious! When I did the recipe I didn´t have apples, so I substituted for pears, and it also came out amazing!
Ingredients
- 8 Italian style sausages, cut into small pieces (without the casing)
- 1 onion, diced
- 1/2 red cabbage head, thinly sliced
- 2 apples (or pears), peeled and cut into small pieces
- 1 cup chicken broth
- 2 tbsp agave syrup
- 1-2 tbsp balsamic vinegar
- 1 tablespoon olive oil
- Pinch of salt and pepper
- 1 bay leaf
Preparation
Heat the oil in a large pan over a medium heat, until the onion is translucent. Add the cut sausage and cook until golden and done on the inside, for about 4 minutes.
Add the cabbage and cook for about 2 minutes, stirring occasionally so it mixes well.
Add the remaining ingredients and bring to a boil. Cover, reduce to a low heat and cook for about 20 minutes until the cabbage is soft and tender. Stir occasionally. Discard bay leaf before serving.
Serve as is for a low-carb meal, or serve with white or brown rice for a complete dish. My kids ate it with the rice and loved it!
