Roasted Vegetables

You would not believe how delicious this dish is. I love it! Even my husband liked it and he usually steers away from vegetables, but this time he would not stop saying how good these were. 🙂

These veggies can be served as a side dish to meats, poultry, fish… I love to pair them up with the Baked Halibut. It is also very good with some bread and goat cheese, with rice or even in a salad. If you like it to be a little bit spicy you can add a couple cloves of chopped garlic (very small) and add it with a little bit of olive oil once the vegetables are cooked and cooled. Then mix it all in with your fingers. Mmmmm…

Ingredients:

  • Red pepper
  • Green pepper
  • Onion
  • Eggplant
  • Chopped garlic
  • Olive oil
  • Salt and pepper

Preparation:

Cut all the vegetables in strips and put in a big oven tray. Chop the garlic (the amount you want, I used 2 cloves for 1 of each vegetable) and add a drizzle of olive oil, salt and pepper.

We mix everything with our hands so that all the vegetables get wet with the oil and the garlic gets well integrated with the vegetables.

We put in the oven at 200ºC until the vegetables are cooked and soft, for about 1 hour.

You will see how delicious they are!
